Instant Veg Pasta in White Sauce – Indian Style

Pasta – One of our family favorites, especially my little ones. But they love their Pasta in white sauce than the marinara sauce. Instant Pot, my magic kitchen gadget has made making Pasta so easy. No need to separately cook veggies & pasta. As I have mentioned earlier in my other IP posts, single pot cooking makes Instant Pot my favorite gadget. We love Indian flavors in our pasta and this is how I make it. I hope you enjoy it too! 🙂Veg Pasta (1)

Ingredients:

  1. Carrots – 2 sliced thick
  2. Beans – 6 sliced thick
  3. Green peas – 1/4 cup
  4. Shell Pasta – 2 1/2 cups
  5. Chilly powder – 1/2 Tsp
  6. Pav Bhaji Masala – 1 1/2 Tsp
  7. Water – Approx. 3 1/2 cups or enough to just cover the pasta.
  8. Salt – To Taste
  9. Butter – 1 Tbsp
  10. Cumin Seeds/Jeera – 1/4 Tsp

Ingredients for White Sauce:

  1. Butter – 1 Tbsp
  2. All purpose flour – 1 Tsp
  3. Milk – 1/2 cup
  4. Water – Apprx. 1/2 cup or enough for the sauce consistency
  5. Salt – To Taste
  6. Black/White Pepper powder – 1/4 Tsp

Method:

  • Switch on saute mode on Instant Pot and add butter. As the butter melts, add Jeera and let it splutter.
  • Add veggies (cut a little thick) and saute for 2 minutes.
  • Add chilly powder & Pav Bhaji Masala. Saute for a minute.
  • Add the uncooked Pasta and Mix well.
  • Add salt to taste and pour just enough water that it stays above the pasta.
  • Saute mode off and switch on Manual – 1 min. Once the manual cooking is done, Quick Release(QR) the pressure after 1 minute. Be careful when quick releasing the steam. Cooking for 1 minute keeps the pasta – Al Dente.
  • Mix in the white sauce, steamed cauliflower, cilantro.
  • Top it with some shredded cheese & serve hot.Veg Pasta (1)Veg Pasta (4)

Recipe for White Sauce:

  • In a pan add 1 Tbsp of Butter.
  • As it melts, add All purpose flour and whisk until it turns light yellowish.
  • Add Milk, salt & pepper powder. Gradually add water and whisk until it reaches a sauce consistency.

Note:

  • Cooking time differs for each pasta. I have used Shell pasta here which usually takes 6 minutes to cook on regular stove top. For Penne Pasta, IP cooking time would be manual – 3 mins and QR after the cooking time. A bit of trial & error would be needed to identify the right IP time for each variety of pasta.
  • I like my pasta cooked Al dente. If you would like the pasta a little softer, add a minute or two.
  • Slice the veggies a little thick, so that pressure cooking doesn’t smash the veggies.
  • Cauliflower/Broccoli gets mashed when cooked in Instant Pot. And hence I steam them separately in Microwave, saute in a pan and add it to the pasta in the end.
  • Adjust Milk & water in the white sauce according to the amount of cooked pasta.
